Was created in 2005, By Gaspare De Luca and his wife, with the aim to introduce regional products, into the British market. Following a big experience matured in the industry and the big buying power generated, Gaspare & Nathalie have decided to expand their warehouse and offer their products to wholesale & distribution.
It’s a smoked cow milk cheese, similar to mozzarella with an almond colour and lighter interior.
The smoked variant, called Scamorza Affumicata is made by smoking the cheese over flaming straw for around 10 to 15 minutes. A fresh version of Scamorza is also sold within a few days of production. The texture of Scamorza is elastic, stringy and has less moisture than Mozzarella.
